DAY 41 | Consuming Every Part of Carved Pumpkins

It’s that time of year again! Jack-o’-lantern time!!

We carve pumpkins every year and being part of a huge family means A LOT of pumpkin guts.

I try to save the seeds and roast them, but I have never thought to do something with the pulp and meat. Ever.

For one, I’m not the best cook and DEFINITELY not the best baker. But this year I’m going to try.

In the name of food waste, I’m going to be -attempting- making a pumpkin cheesecake, pumpkin butter and a shit ton of dog treats.

This can actually turn out to be fun and part of the tradition!
